Homemade Cowboy Candy Recipe

Cowboy candy, also known as candied jalapenos, is a sweet and spicy treat that’s gained popularity for its unique flavor profile. For someone whose never heard of it or tried it, looking at the name you’d think it’s something strange and not nice, but it’s just candied jalapenos, but this time it is flavorful.  If you’re yet to try it, then I can argue you’ve probably never had anything like it before and you’re in luck because I’ve got the best recipe for you to recreate your own cowboy candy at home.

Cowboy candy is made by simmering sliced jalapeños in a sugary syrup until they become tender and infused with sweetness. The result is a perfect balance between the heat of the peppers and the sugary glaze, offering a taste that’s both fiery and sweet. I mean if you bite it first, you’ll only think of it’s sweetness but slowly, the heat creeps in and you get the full experience of sweetness and heat.

I don’t know how else to explain the goodness than to just help you recreate your own truly homemade cowboy candy at home with my carefully written recipe below.

I’ll be guiding you to make the tastiest cowboy candy by following this simple-to-follow cowboy candy recipe.

Homemade Cowboy Candy Recipe

Recipe Information

  • Prep Time: 20 minutes
  • Cook Time: 1 hour 15 minutes
  • Course: Snack
  • Cuisine: American
  • Servings: 3 pints
  • Calories: 50 kcal

Equipment

  • Sharp knife or mandoline
  • Cutting board
  • Large pot or saucepan
  • Slotted spoon
  • Stirring spoon
  • Measuring cups and spoons
  • Sterilized canning jars with lids and bands
  • Canning funnel, optional
  • Tongs or jar lifter
  • Water bath canner, optional for long-term storage

Ingredients

  • 1 1/2 pounds fresh jalapeño peppers
  • 4 cups granulated sugar
  • 1 cup apple cider vinegar
  • 1/2 teaspoon turmeric
  • 1/2 teaspoon celery seed
  • 1 tablespoon mustard seeds
  • 1/4 teaspoon ground cayenne pepper, optional for extra heat

Instructions

1. Prepare the Jalapeños

Wear gloves to avoid irritation. Slice the jalapeños into thin, even rings using a sharp knife or mandoline. Discard the stems but keep the seeds if you like extra heat.

2. Make the Syrup

In a large pot or saucepan, combine the sugar, apple cider vinegar, turmeric, celery seed, mustard seeds, and cayenne pepper. Stir well to mix.

Bring the mixture to a boil over medium heat, then reduce the heat to low. Simmer for about 5 minutes, stirring occasionally, until the sugar is fully dissolved and the syrup is slightly thickened.

3. Cook the Jalapeños

Add the sliced jalapeños to the pot, stirring them into the syrup. Bring the mixture back to a boil, then reduce the heat and simmer for 4–5 minutes. The jalapeños should be slightly softened but still retain their shape.

4. Jar the Cowboy Candy

Using a slotted spoon, transfer the jalapeños to sterilized canning jars, packing them in tightly. Leave about 1/4 inch of headspace at the top of each jar.

Pour the hot syrup over the jalapeños, ensuring they are fully covered. If needed, use a canning funnel to avoid spills. Remove any air bubbles by gently tapping the jars or using a non-metallic utensil.

Wipe the rims of the jars with a clean, damp cloth, then place the lids on top and screw on the bands until fingertip-tight.

5. Process the Jars

For long-term storage, process the jars in a boiling water bath for 10 minutes. Use tongs or a jar lifter to carefully lower the jars into the canner, ensuring they are fully submerged.

After processing, remove the jars and let them cool on a towel or wire rack. Listen for the lids to seal as they cool. Any unsealed jars should be refrigerated and used first.

6. Cool and Store

Allow the jars to cool completely at room temperature. Store them in a cool, dark place for at least 2 weeks before opening to allow the flavors to develop.

Once opened, store in the refrigerator.

Serving Suggestions

  • Add to sandwiches, burgers, or hot dogs for a sweet and spicy kick.
  • Serve with cheese and crackers as a flavorful appetizer.
  • Use as a topping for grilled meats or tacos.

Nutritionally, cowboy candy is a mixed bag. While jalapeños themselves are low in calories and rich in vitamins A and C, the added sugar in the syrup increases the calorie count. A small serving can pack a lot of flavor without a huge calorie load, but it should be consumed in moderation, especially for those watching their sugar intake. Cowboy candy is a flavorful way to enjoy jalapeños, perfect for adding a kick to your meals.
